4 Easy Cake Recipes for This Festive Season- Best Holiday Cake Ideas

                       Delicious! Delicious!   With Christmas and New Year round the corner, who don’t want to celebrate with freshly baked cakes? Bakeries are full with special festive cakes and cupcakes but nothing taste like home baked one. I have been baking cakes since the age of ten and now my ten year old loves to help me. My easy cake recipes are ideal for beginners with simple ingredients available locally.  

Blueberry and Dates Cake

  Blueberry and Dates Cake Blueberry and Dates Cake   This cake is ideal for festive season and you can replace blueberry with raisins or cranberry or use all of them.   Ingredients: Wheat flour or Refined Flour- 2 cups, Dates- 8-10 (soaked in half a cup warm milk), Blueberries- 3 Tbsp., Vanilla essence- 1 tbsp, Baking soda- 1/2 tsp, Baking powder- 1 and 1/2 tsp, Oil or Butter- 3/4 cup, Eggs- 3, Sugar- 1 cup (powdered),Cinnamon powder- a pinch   Method:
  • Preheat the oven at 170 degree.
  • Sieve flour, baking powder, baking soda and keep aside.
  • Grind dates in a mixer.
  • In a large bowl, mix oil and sugar with a hand blender or a wooden spatula. Add eggs one at a time and mix it well. Now add the dates mixture, vanilla essence, cinnamon powder and mix.
  •  Add the flour in batches and mix with spatula. In between add blueberry. If the batter is too thick add a tbsp of milk to adjust the consistency.
  • Grease the baking tin with oil or butter and bake the cake for 30-35 minutes at 170 degree.
  • Check the cake with a clean knife if it comes out clean then your cake is ready, but if your knife stick to the particles of the cake particle then bake it for another 5- 7 minutes till it is completely done.
 

 Easy Chocolate Cake

  Irresistible! Irresistible!   Everyone loves the chocolate cake, just follow my easy cake recipes and you can become baking star of any party. Just add hot chocolate ganache or readymade chocolate sauce on top and serve.   Ingredients :All purpose flour (Maida)- 2 cup, Butter or Oil-2/3 cup, Eggs- 3, Baking Powder- 1, ½ tsp, Baking Soda- ½ tsp, Sugar (powdered)- 1 cup, Vanilla Essence- 1 tsp, Cocoa powder- ½ cup   Method:
  • Preheat the oven at 175 degree C.
  • Sieve all purpose flour (Maida), cocoa powder, baking powder, soda through a fine strainer.
  • Beat butter and sugar powder thoroughly with a hand blender or mixer.
  • Add eggs one at a time and mix followed by adding vanilla essence.
  • Now add the flour and cocoa mix in batches and mix with a wooden spatula. If it’s too thick add a tsp of milk to adjust the consistency.
  • Grease a cake tin with oil or butter and pour the mixture.
  • Bake the chocolate cake for 30 minutes at 175 degree C.
  • For Chocolate Ganache- microwave 200 gm dark chocolate with 200 gm fresh milk for one minute. Mix well and spread over the cake.
 

Choco Chip Vanilla Cupcakes

  Kids Favourite Kids Favourite   These mini cakes are kids's all time favourites, even kids can bake following this easy cake recipe.   Ingredients: All purpose flour or Maida- 1 and 1/2cups, Oil/butter-1/2 cup, milk- 2 tbsp, Eggs- 3, Baking powder- 1, Baking soda- ½ tsp., sugar (powdered)- 3/4 cup, vanilla essence- 1 tsp, choco chips- 4tbsp.   Method:
  • Sieve Maida, baking powder, soda through a fine strainer.
  • Beat butter/ oil and sugar powder thoroughly with a hand blender or mixer.
  • Add vanilla essence, eggs one at a time and 2 tbsp milk and mix it gently.
  • Now slowly add the flour and mix continuously. Add milk to adjust the consistency. Dust 1 tsp. flour on Choco chips and mix it in the cake batter.
  • Grease the cupcake mould, you can put butter paper for the lining.
  • Pre heat the oven at 175 degree and bake the cup cakes for 20-25 minutes.
 

Super Moist Eggless Carrot Cake

  Moist and Yum.....! Moist and Yum.....!   Love eating carrots? Try this easy cake recipe once with carrots. It's healthy and a no fail recipe and the cake tastes yum.   Ingredients: All purpose flour or wheat flour- 2 cups, Butter or Oil-2/3 cup, condensed milk- 3 tbsp, milk- 1 cup, curd- ½ cup, carrot grated- 2 cups, Baking Powder- 1, ½ tsp, Baking Soda- ½ tsp, Sugar (powdered) or brown sugar- 1 cup, Vanilla Essence- 1 tsp, cinnamon powder- half tsp, raisins- 2 tbsp.   Method:
  • Sieve flour, baking powder, soda through a fine strainer.
  • Beat butter/ oil and sugar powder thoroughly with a hand blender or mixer.
  • Add condensed milk, curd and vanilla essence and mix.
  • Now slowly add the flour and mix continuously. Add milk to adjust the consistency. Now add the carrots, raisins and cinnamon powder.
  • Grease the cake tin and Pre heat the oven at 175 degrees and bake the cake for 35 -40 minutes.
